Confession: I love (love) the show “Extreme Wight Loss” with Chris Powell. I find the stories and journeys inspirational, and appreciate the “natural” way they go about losing weight. As I was perusing social media the other day, I came across a quote from Chris’ wife, Heidi, when she was pregnant. She said, “I like to think of myself as building a baby….” That struck a cord with me… I tweaked it a little and like to consider myself “growing a baby.”
That being said, it likely explains my over fanatical concern with what I am putting into my body. Can’t pronounce the ingredients?? I’ve been passing. Meats not grass-fed, anti-biotic free, no thanks. While I can’t live like this 24/7, I’d say I’ve been following it 90/10. I still have a sweet tooth and indulge it… because what would life be if I didn’t? And why would I want to deprive the little one of that sweet goodness? I guess I just try to pick the right ingredients, as much as possible, to help the little bean “grow” into a healthy little girl.
Enter this superfood salad bowl. It’s loaded with tons of nutritional goodness and can be whipped up in less than 15 minutes. For me, it’s the perfect lunch and keeps me feeling full and fueled 🙂
Ingredients:
1 cup of Kale (remove from stems)
1/2 cup of cooked lentils (I prefer the pre-prepared kind from Trader Joe’s… they’re in the refrigerator section)
1/2 cup cooked Quinoa (again, you can find pre-made at Trader Joe’s… in the freezer section)
1/4 cup Garbanzo beans
1/2 cup Shredded Carrots
6 Plum tomatos, sliced in half
1 Tbsp sunflower seeds
2 Tbsp Annie’s Lite Goddess Dressing
Directions:
Prepare the Quinoa and Lentils per the packaging instructions. Combine all ingredients in a bowl and mix together!
