I love snacks. As in, after I finish breakfast, lunch, or dinner (yes, dinner) I’m always excited for what my snack will be. I don’t know why, I just do. So, it’s only natural that I would put some time and effort into those mini morsels of goodness that get me from one meal to the next (and by the way, the snack after dinner is always dessert…). I try to make my snacks healthy and delicious. It’s typically another chance to incorporate a few healthy fats, fruits, and/or vegetables….
And one of the ways I do so is by using rice cakes… not because they are particularly nutritious (I actually don’t think they have any nutritional value) but because they add a crunchy base to place all my healthy toppings. I purchase these (no salt, brown rice version) and build from there. I’ve put together the 5 ways I eat rice cakes below, and have added in some of my favorite food products I use to create them. Happy snacking!
Peanut Butter + Yogurt + Berry Delight
I am currently loving Justin’s Honey Peanut Butter… so it was only natural to include it. To make this delicious little morsel, simply spread tablespoon or so onto the rice cake. Top it with a dollop of greek yogurt (mine is a dairy free version) as well as a few berries. Sprinkle with chia seeds (here is an article on chia seed health benefits). There you go. It might be my favorite!
Banana + Almond Butter
Pretty basic. Not lacking in the taste department though. I used crunchy almond butter (about a tablespoon) and then topped it with thinly sliced bananas… drizzled with honey and sprinkled with some chia seeds. There you go folks.
Avocado + Lox + Sprouts
I like this option for breakfast… or even as part of a lunch… or even a snack. Let’s be honest… I don’t really discriminate. To make, simply mash 1/4-1/2 avocado, shake some red pepper flakes on top, layer on about 1-2 oz of lox, and top it off with some sprouts. Tasty. Healthy. Done.
Hummus + Fried Egg + Sprouts
I have a thing for slightly runny eggs, so this rice cake fit that craving. I started with a kale pesto hummus, fried up my egg (well, didn’t really fry it since I didn’t use any oil… just a little spray) to the desired wellness, and then sprinkled some pepper flakes and finished it off with sprouts (again). Breakfast, paired with a bowl of fruit or green juice? Sure, why not??
Sweet Potato (or yam) + Cacoa Nibs
I have a sweet tooth like no one else. This one was a major “duh” in my book. It’s perfectly savory, and healthy, at the same time. To do it, heat up a small sweet potato, scoop out the insides, and spread on the rice cake (you don’t have to use the whole sweet potato, just enough to cover the cake), shake some cinnamon over it, top with a teaspoon of cacoa nibs, and drizzle with honey. After dinner treat? Yes please!
