Breakfast has to be one of my favorite meals of the day… mainly because I’m typically starving after my workout, so everything tastes particularly good. Given that, I like to make sure my meals are tasty + nutritious. I shared a similar post about a year and a half ago, but since have started to incorporate new breakfast dishes that are so worth of being shared. So today I’ve compiled a quick round-up of my favorite healthy, nutritious, and delicious breakfast options….
OVERNIGHT OATS
My go to right after I had Camille, mainly because I felt as if the morning hours were a blur with nursing and trying to balance both kiddos… it was so easy to just have something ready the minute I woke up…. it’s a hit with the entire family and full of such delicious flavors. RECIPE HERE
DAIRY FREE CHIA PUDDING
Another simple breakfast to prep the evening before… you can even meal prep this on a Sunday and allocate the pudding out into smaller containers for an easy grab n’ go option. I love the fiber that chia seeds provide and because I can customize the toppings, it’s easy to mix up the flavor depending on what my tastebuds are craving that morning. CHOCOLATE SMOOTHIE
I often find myself craving a smoothie for breakfast during the warmer months… and usually after a longer outdoor run. There is just something so refreshing about a super thick smoothie. Anyway…. this one is loaded with frozen zucchini (can’t taste it… and you get veggies first thing in the morning), bananas, and good fats. It always leaves me satisfied until my morning snack. SOFT SCRAMBLED EGGS
I love a good soft scrambled egg… and have been cooking them so much lately. I like to have them with some ripe berries, arugula with salsa verde (or the Trader Joe’s Green Goddess Dressing) + two slices of Wellshire Farms turkey bacon. It’s a protein packed breakfast that leaves me satisfied for hours.
EGG MUFFINS
Another simple + easy option that you can make ahead in batches on a Sunday. I have since stopped using the sweet potato crust.. and it’s equally as delicious. I remember I first made these as an easy breakfast option to take to the airport (not a huge fan of airport food)… and they’re super simple to just reheat the next day! RECIPE HERE
