Someone once mentioned to me that my “recipes” (and I use that term loosely, since most of my dishes are very simple) are akin to a “capsule wardrobe…” instead it’s a “capsule ingredient list.” I had never thought of it that way, but she was so right. I tend to use the same ingredients, repurposed in different ways, to create tasty, healthy, and quick weekday + weeknight meals. In the same way a capsule wardrobe helps getting ready a cinch, so to does having go-to ingredients to make clean + healthy eating easy.
That being said, this carrot spiral bowl is one such dish. I use all these ingredients other ways (tacos, Italian night, burgers, curry dishes….), but when they’re all combined together in this dish, the flavors pop, and it’s a delicious weeknight meal. I hope you enjoy!
Turmeric Carrot Spirals
Ingredients
1-2 packages of the Trader Joe’s Carrot Spirals (or you can spiralize your own)
1 lb protein of your choice
1 cup of defrosted peas (I buy my frozen)
Broccoli
2 minced garlic cloves
diced green onions
Turmeric Almond Dressing from Trader Joe’s
Cooking oil (I use Chosen Foods Avocado Oil)
Cumin
Garlic Powder
Sea Salt
Pepper
Directions:
Heat up oil + garlic in a sauté pan… add in the carrot spirals and then drizzle with a little more olive oil. Cook according to instructions on the packaging. Check frequently so that they don’t overcook and become soggy. While the carrots are cooking, cook your protein. For both ground beef + ground turkey we use some garlic powder, black pepper, cumin, and sea salt. Once the carrots are finished cooking, add in the peas and mix in the dressing a little at a time (too much will make it soggy). I recommend adding it in 2 tbsp increments… add just enough that the carrots absorb all of the dressing. Sprinkle in a little salt + pepper. Top with cooked broccoli + diced green onions.
