Wellness Wednesday || Easy Lemon Garlic Chicken Kebabs

Over the past couple of weeks, we’ve found ourselves falling into that midday rhythm of asking “What sounds good for dinner…” then going back and forth between our go-to’s, and ultimately deciding on something that “sort of sounds good…” something from our usual list of dinner menu items. Sounds familiar to anyone else??

So when Sunday morning rolled around I was surprised that I woke up knowing exactly what sounded good for dinner. I’d been in the mood for Greek food so I recommended lemon garlic chicken kebabs… TJ has been making a delicious lemon garlic marinade and I figured adding some veggies into the mix would make it the perfect Sunday evening meal to quickly grill on the BBQ. It was a hit with everyone, and we made enough to have leftovers the next day for lunch (nothing like making Monday a little easier with one less meal to think about….). You can serve it with anything really, but we opted for the garlic herb right rice and a side arugula salad with olives, tomatoes, and red onions.

Sharing the recipe here in case you’re looking for a little inspo in the dinner department!

INGREDIENTS

3lbs of boneless chicken breast (less if you don’t want leftovers)
3 large bell peppers (cut into medium sized pieces)
1 large red onion (cut into medium sized pieces)
2 zucchinis (sliced… thicker is better because if they’re too think they will get soggy on the grill)
2 tbsp minced garlic
2 juicy lemons, juiced
1/3 cup avocado oil (olive oil works too)
skewer sticks (soaked in water so they don’t burn)
1 tbsp sea salt
garlic powder
lemon pepper

DIRECTIONS

In a plastic bag (this is so you can continually flip the contents over to evenly distribute the marinade over the chicken) combine chicken, lemon juice, garlic, avocado oil, and 1/2 tbsp salt and let it sit in the refrigerator for 6 hours (the longer the better).

Then cut chicken into cubes and assemble with the vegetables on the kebab sticks.

Once assembled, take the remaining 1/2 tbsp of sea salt, garlic powder, and lemon pepper and sprinkle it over the kebabs.

Grill util the chicken is cooked.

Then, enjoy!
