Wellness Wednesday || Delicious + Simple Shrimp Tacos

Tacos. Likely my favorite dish to ever exist. I could eat them everyday… likely because there are just so many different combinations to make it taste new. So naturally, when TJ + I were going back and forth on what to have for dinner, we decided on shrimp tacos. I wanted to make a new spin on them, and was craving something crisp + fresh. We came up with this coleslaw (no mayo….) mixture to toss into the mix and the combination was one that had us both wanting to make the dish again sooner rather than later! Sharing the delicious recipe with you below…. if you try it, hope you enjoy!

INGREDIENTS

1lb of Shrimp (we use Trader Joe’s Argentinian Red Shrimp)
Shredded Cabbage + Carrots
Arugula
1 Lime
Avocado oil
Sea Salt
Garlic Powder
1 tsp of Cumin, Pepper, Sea Salt, Oregano, Paprika, Garlic Powder
Tortillas (we use these)
Guacamole (we mix our avocado with Trader Joe’s Salsa Verde + Garlic Powder)

DIRECTIONS FOR SHRIMP

Massage the shrimp with the spice mix above…. then drizzle lime juice from 1/2 of the lime over the shrimp. Spray a skillet so the shrimp won’t stick and sauté until the shrimp curls in and is firm.

DIRECTIONS FOR COLESLAW

Toss the arugula, cabbage, and carrots in a bowl (no specific amount, just eyeball it). Drizzle with avocado oil (olive oil would work too), juice from the other half of the lime, a touch of sea salt + garlic powder. Mix together.

Assemble according to your liking and enjoy!
