Wellness Wednesday || Chocolate Avocado Pudding: A Simple + Delicious Holiday Dessert

I know I’ve mentioned it here before, but we’ve hosted Christmas Eve at our house for the past 10 years (with a slight break last year when our home was a construction zone….). I try to make the meal simple + laid back so that everyone can feel relaxed + just enjoy being together. That being said, I’ve taken to ordering pot pies from a local “boutique” pot pie spot (never knew there was such a thing until I started researching it… think kale chicken pot pie, etc…. #fancy…), tossing together a large salad, having a cheese platter for some light hors d’oeuvres, some wine, and a delicious, yet easy, dessert. I’ve typically opted for cookies, or a hot chocolate bar, in past years, but this year I decided to try something a little different…..

I recently got this Vitamix Ascent Series blender and wanted to use it to make something that didn’t require a ton of dishes + would be ready within 20 minutes. It came with an amazing book of recipes, with everything from easy soups to baby food, so I decided to start there. I stumbled across this avocado pudding recipe and was sold. I’ve long loved using avocado in baking mainly because it makes everything so creamy + rich. I made a slight modification + gave it a whirl (or blend….). The end result was an creamy, delicious, + might I add, incredibly easy, holiday dessert. I opted to top it with some additional Lily’s Milk Chocolate Chips + crushed peppermint to make it even more seasonally appropriate. I had my taste tester, little miss, give it the final approval. She loved it… so I figured everyone else will too!

As we get into the New Year I think a Vitamix is such a worthwhile investment to have. I’ve owned several different blenders over the years, and the vitamix is the best. I’ve owned a Vitamix blender for over two years and I can always count on it fully blending all my products (other blenders seem to leave chunks here and there). I love that this blenders comes with a 10 year standard warranty, which means I can invest confidently. What I love about the Ascent blender is that it has a sleek design, it has variable speed + pulse control so I can get the exact texture that I am looking for, and it also has a timer so I can set the blending time and walk away (best for those multitaskers like me!). They also offer a certified reconditioned program, which is a great way to get one of their superior products at a less expensive price. One product I have my eye on are the blending bowls… so I can easily purée baby food for Camille in a much smaller container than using the large blending cup. And, they have a nifty gadget that makes cleaning under the blender blade a cinch! So if you’re considering investing in a blender for the holidays (perhaps a gift to yourself) or the New Year, I can’t recommend Vitamix products more….

Annnnd, if you’re looking for a festive holiday dessert, I can’t recommend this creamy avocado chocolate pudding more…..

CHOCOLATE AVOCADO PUDDING

INGREDIENTS:
1 cup of oat milk
1 large avocado, halved, pitted, + peeled
2 packets of hot chocolate mix
1 cup of ice cubs

DIRECTIONS:
Place all ingredients, in the order they are listed, into the blender.
Select Variable 1. Start the machine, slowly increase to its highest speed, and blend for 15 seconds, using the tamper if needed.
Top with whatever festive toppings you’d like!
Serve + Enjoy!
