Wellness Series || An Easy, One Pot, Weeknight Mexican Skillet Dinner

TJ + I always get these ideas for dinner… and never really give thought to how many dishes we’ll actually have to wash at the end of the night… between everyone’s dinner dish, and then all the pots and pans it took to prep the meal, sometimes we’re left with a mountain of dishes that we didn’t expect until it was too late (read, after dinner was finished)….

So last week when we wanted to try our hands at a new dish, we decided to challenge ourselves to use one pot. We decided to use this new 8 in 1 cooking pot we received last week… and it worked like a charm. At the end of the evening, aside from the dinner dishes, we had one easy to clean pot and it felt like a breeze…

The dish was also super easy and a hit with the entire family (well, with Harper it wasn’t a hit until I picked out every tiny little onion….). It was full of flavor, ready in about 20 minutes, and we even had enough left over for the next day’s lunch (which is always an added bonus in my book). Sharing the recipe here today if you’re looking for an easy meal you can throw together between everything else going on in your life!

EASY WEEKNIGHT MEXICAN SKILLET

INGREDIENTS

1lb ground turkey
1 large green bell pepper (diced)
1 large red bell pepper (diced)
1 small onion, diced
2 1/2 cups of cooked brown rice
1 12oz can of black beans
avocado oil
minced garlic
cumin
chili powder
sea salt
pepper
garlic powder
cilantro
avocado slices
pico de gallo
arugula
salsa (we use salsa verde)

DIRECTIONS

1. Heat 1 tbsp of avocado oil in the skillet.
2. Add in bell peppers + onion and sprinkle with chili powder, sea salt, and pepper to your liking (we don’t measure this out…). Sauté until just soft. Then remove and place in a bowl.
3. Next add 1 tbsp to the pan, and place ground turkey in pot. Season with garlic (about t tbsp), cumin (about 1 tbsp), chili powder (about 1 tsp), pepper, and sea salt and then cook. When the ground turkey is almost fully cooked toss in the beans (drained or liquid), cooked brown rice, and bell pepper mixture. Allow it to all simmer together until ground turkey is fully cooked.
4. In a dinner bowl, place arugula at the bottom and toss with some salsa verde. Then add the desired amount of ground turkey mixture to the bowl. Top with any or all of the following: cheese, avocado, pico de gallo, salsa verde, cilantro.
