Wellness Series || A Simple + Delicious Grab-N-Go Breakfast

Someone recently asked me how I am so “peaceful….” as they felt that every time they watched my insta stories I seemed so calm. I nearly choked on my kombucha. That’s never a word that I would personally ascribe to myself. I was very candid with her, and shared that I have moments during every day where I need to take deep breaths, close my eyes, imagine my happy place…. remember what I am grateful for… and that no matter how bad one day is, I get to start fresh the following. I validated her feelings that motherhood isn’t easy…. and that she’s not alone….

Annnd, because life is beautiful and messy all at the same time, I like to try to un-complicate + simplify things, where I can, as much as possible. Easy healthy meals…. practical everyday style… mom hacks here and there…. I try to make it easy and seamless…. to leave time for those more unpredictable moments in life (i.e. toddler meltdowns, deadlines, etc….). Enter this super simple mug oatmeal. You literally throw in a few ingredients, pop it in the microwave for 2 minutes, let it cool for a bit, and then head out the door. It’s a one dish wonder that you can consume on your way to work… a workout… or whatever else you’re jetting off to in the morning. I love to make it on mornings where we’re heading to an early spin class… or for Harper if we need to leave the house earlier than usual. It’s a hit with the entire family… and Harper asks for it by name… TJ requests the verbal recipe several times a week….

Grab-N-Go Oatmeal:

INGREDIENTS:

3/4 cup oatmeal
1/2 mashed banana
1 egg
Almond Butter (to your liking)
Cinnamon (to your liking)
1 tsp Almond Milk (or more if it seems too dry when mixing)
1 tsp Baking Powder
Optional Add Ins: Cacao Nibs (our fav), Cranberries, Crushed Almonds, etc….)

DIRECTIONS:

Place oatmeal in a microwave safe mug. Mash banana. Toss in banana, egg, almond butter, cinnamon, baking powder, and desired add-ins with the oatmeal, and mix together. Add in desired amount of almond milk (just enough to mix together without it appearing dry). Place in microwave for 2 minutes. Let cool slightly. That’s it. Super Easy. Super Tasty.
