Happy Friday friends! If you follow along closely over on instagram stories, you know that one of our favorite weekend traditions is walking to grab breakfast at our favorite avocado toast spot. IMO, elevated toast recipes are some of the best creations since stretchy pants… and come to think of it, the two go together perfectly. We’ve been trying our hands at some homemade versions, and I thought I’d share a few of them with you today, so you too can sit around in stretchy pants this weekend and devour some pretty good toast….
To start, I toast all our bread in my absolute favorite Breville toaster oven. My parents had it first, and I became so obsessed with it, that I had to get one for our place as well. I love that you can choose a very specific toasting setting…. but not only that, you can bake, broil, cook pizza, slow cook, and reheat items…. which eliminates the need to turn on the bigger oven, and heat up the house (something I try to avoid during the warmer months!). Ebay has so many of my favorite kitchen appliances available, and often for a fraction of regular prices. A few favorites include my KitchenAid mixer, Calphalon non-stick pans (I cook with these nightly… and they last forever), Vitamix Blender that I use to make all our smoothies + acai bowls, and our Wusthof kitchen and steak knives. The great thing is that these items are all new as well. And, if you’re looking to do a little end of season shopping, Ebay is having a site wide sale on women’s clothing, men’s clothing, kid’s clothing, and patio + pool items (I’m loving this outdoor fire-pit… which is great in the cooler month too for s’mores making).
Sooooo, back to the toast. After I toast the bread (we use Dave’s Killer Bread), we add the toppings. Here are our 3 favorites:
Loaded Avocado Toast:
Smash avocado in a bowl with sea salt, pepper, and lemon juice. Spread over the toast and top with sprouts, sliced mini heirloom tomatoes, + red onions. We also like to add a runny egg to this one… makes it a little extra extra.
Bananas + Peanut Butter Toast:
Spread almond butter generously over toast. Top with sliced bananas, cinnamon, + cacao nibs. Drizzle with honey.
Ricotta + Peaches Toast:
Spread toast with ricotta cheese (I use a dairy free option). Top with sliced peaches + drizzle with honey.
That’s it. Simple, but so full of flavor… and, it’s pretty fun to get the entire family involved too! Have a great weekend friends!
