Weekend Breakfasts

Here’s a little logic equation for you (I think I’m finally starting to get rid of my “Intro to Logic” trauma from college…). Weekends are special, and because weekends are special, they logically call for slightly more decadent treats. Some of the best treats come in the form of breakfast foods. So one can conclude that the weekends call for unique breakfast options. Okay, all logic aside, this past weekend I decided to try two different, yet still healthy and clean, breakfast options for slower paced mornings. The first was a quinoa bake I found while perusing on Pinterest. I made some slight modifications to make it a cleaner dish. I only used 1 tablespoon of coconut oil and I left out all the sugar. I found that the dates and bananas, along with the fresh fruit and coconut shavings added all the sweetness I needed. An added bonus? TJ couldn’t believe how delicious it was (and he’s all about protein at breakfast!). If you’re looking for a scrumptious, clean, and balanced breakfast make sure to check out the recipe here. The bake serves about 6 and is approximately 350-375 calories per serving.

The second dish was a simple asparagus and an over easy egg with ezekiel toast. It’s super simple, but for some reason it feels a little more elegant than basic eggs and toast. A simple healthy note here, asparagus has excellent nutritional value. The multitude of vitamins in asparagus helps to manage blood pressure, as well as help to fight against heart disease and cancer. All that in a simple morning meal? I’m hooked! To whip up this simple dish, sprinkle the asparagus with some pepper and a little bit of salt. Next, broil the asparagus (approximately 10-15 minutes) until it is soft to your liking. Cook the eggs to your preference and pair with ezekiel toast (my bread of choice due to it’s increased digestibility, the fact that it’s a complete protein, contains 18 amino acids, and it’s a great source of fiber). This is a complete breakfast all for 300 calories!
