I remember the days of writing a report on the computer, hitting one button, and having hours worth of work disappear in a mere second. I hadn’t had that experience in years (since I was writing treatment summaries and plans for clients…) but yesterday morning I worked on a reel for a couple of hours, hit some button I thought was the right one on instagram, and POOF, said reel disappeared. After a few choice words under my breath, I did what you do when your work has disappeared and simply started over. Thankfully there are autosaves for blog posts, so assuming the internet is working, that doesn’t happen….
All of that aside, Super Bowl Sunday is coming up this weekend and for as long as I can remember I’ve been in charge of bringing the supplies for loaded nachos… and then my mom helps with the assembly (not that it’s really that difficult, haha). We’ve been making them on a sheet pan for years, and honestly, it’s such a better way to enjoy a plate of nachos versus the mound formation they serve them on at a restaurant (you know where the bottom chips have about 75% less toppings than those at the top). When they’re baked on a sheet, everything is evenly spread out, which means a pretty fair distribution of the toppings. So today, I’m sharing the ingredients we use to make said nachos, just in case you’re looking for a tasty dish to munch on while you watch (or don’t watch…) the game!

LOADED NACHOS
2-3 Bags Tortilla Chips (I love the Siete Dip Chips)
1 Can of Refried Beans
2-3 Cups Shredded Cheese (Violife is my favorite DF option)
1 Jalapeño Sliced (optional… put on side if you have spicy sensitive people)
Pico De Gallo
Guacamole
Pickled Onions
Sour Cream (Forager is our favorite DF option)
Sliced Olives
Cilantro
Pre-heat oven to 350
Spread tortilla chips out on a large baking sheet.
Generously sprinkle cheese over the chips
Bake in oven for 5-10 minutes until cheese is melted(watch very closely as chips and cheese can burn easily…)
Spread remaining toppings- beans, guac, sour cream, pico de gallo, pickled onions, cilantro, jalapeños.
