Super Beet Salad

Salads can sometimes be a tricky thing for me. As a side, they are great. As a full meal, they are hit or miss. If you skimp on the ingredients, you’re pretty much having a rabbit lunch. Too many ingredients and you might as well have ordered that double double. So, I tend to experiment. I like to combine “super foods” and “healthy” fats in my salads. It’s typically the time that I toss in avocado, nuts, and some cheese. A couple of weeks ago, I was out at a restaurant and had a scrumptious beet salad. I couldn’t remember what was in it, but I simply loved the taste of the beets. Wanting to recreate it for a mid-week lunch, I decided to throw in some of my of-the-moment food obsessions. The final product was a delicious, filling, and super nutritious salad (small side note, Arugula is a powerful antioxidant which has the power to detoxify the body naturally, Pistachios play a role in fighting off cancer and heart disease, Goat Cheese <in moderation> is a great source of calcium, and Beets naturally cleanse the body, promote mental health, and are a natural form of energy!).

Ingredients:

Beets (however many you want) cooked according to directions (OR, a small hint… you can buy them pre-packaged at Trader Joe’s :))

1/4 cup of Goat Cheese

1/4 cup roasted & unsalted pistachio meats

2-3 cups of Arugula

1-2 Tablespoons Balsamic Vinegar

Mix all the ingredients together in a bowl and enjoy! For those of you who are curious this salad is approximately 350 calories.
