I think that I have been ready for Fall since July… at least that is what my Pinterest account shows! Amidst the soups and chilis I’ve been going crazy over, my true obsession, and what I couldn’t wait to start making, is anything pumpkin. Yet, with all the extra treats that come with the upcoming holidays, I really wanted to be able to indulge (daily when it comes to pumpkin bread/muffins) without the bulge! So, I went to the ever amazing skinnytaste and found this delicious recipe for these pumpkin chocolate chip muffins (and only 160 calories a muffin!). Despite it being a cool 90 degrees outside here in Southern California I couldn’t help but turn the oven on the minute October arrived (my true confession is that I turned on the air to make it feel like fall inside…) and make my first batch!

I’m an inpatient person so, in the middle of cooking, I couldn’t help but sneak a taste of the batter… and if the batter was any indication of the amazingness of the final product, I was in luck!

These were quite possibly the best pumpkin muffins I have ever tasted. They were incredibly moist, sweet, and the pumpkin-chocolate combination was savory beyond words!  I’ve already made several batches (one went with the hubby to work) and will continue to make them throughout the season! They have become a part of my new favorite breakfast: one of these little indulgences with an egg white, tomato, spinach, and feta omelet (all under 350 calories) which keeps me satisfied throughout the morning! I hope you’ll enjoy them just as much!
