Mini quiches: One of my favorite brunch snacks. What’s not to love? Eggs, cheese, some sort of crust, and whatever other toppings of your choice…what’s not to love? However, I’ve realized over the years that these little quiches, regardless of how “mini” they are, are not always healthy, and are almost never gluten free (my skin does not like it when I eat gluten). So when I randomly stumbled upon Cooking Channel’s Real Girl’s Kitchen with Haylie Duff, I was pleasantly surprised when she made quinoa bites for her G-Free friend. Though admittedly not the same as a quiche, these bites are good for appetizers or quick, on-the-go snacks!
Th recipe can be found here, but I made a few tweeks: I added chopped cranberries in order to add another layer of texture and flavor, and I also amped up the goat cheese just a bit by adding a little more…hey, it’s all healthy, so why not indulge a bit?
