Piscine Cocktail || Champagne On Ice

When TJ and I did a weekend stay at The Viceroy Hotel (in Palm Springs) many years ago… pre-kiddos feels like many years ago at this point (haha)…. we saw a pool full of individuals sipping on champagne being poured into a large wine glass, filled with ice. When we asked the waitress what it was, she said “The Moët Ice is on special today… it’s champagne you drink on ice.” We were confused at the thought of champagne on ice…

Fast forward to several years later and we were talked into trying it, and we were immediately hooked. The champagne is made differently and remains effervescent even as the ice melts… and when topped with some fresh berries, and a sprig of mint, it’s the perfect celebratory beverage to enjoy on a warm spring, or summer, day.

I included the simple how-to below, including four different champagne on ice options… and I also included a similar, mocktail, option that I love to sip on mid afternoon during the week!

HERE’S WHAT YOU’LL NEED….

1 bottle of champagne meant to be served over ice (it’s made differently)… sharing save and splurge options below:
Moët Ice Imperial (splurge)
Veuve Riche (splurge)
Depréville (save, the rosé version is better than the demi sec)
Veuve Du Vernay (save)

Filtered ice cubes (you want the ice to be tasteless so that when it melts it won’t impact the taste of the bubbly)
Fresh Berries (we do raspberries and blueberries, sometimes blackberries)
Sprig of Mint

Fill a large wine glass with filtered ice. Pour in champagne. Top with berries + sprig of mint. Sip + enjoy!

And if you want a non-alcoholic option, I love muddling some raspberries and mint in a glass, tossing in some ice, pouring in some sparkling water, and topping with a bunch of lime juice…. just as refreshing!
