Aren’t family traditions the best? In our family we have several: watching the Griswold Family Christmas the night after Thanksgiving every year, wine tasting Friday nights, cinnamon roles Christmas morning, birthday BBQ’s etc. One of the more casual traditions of ours is cheese and crackers and other assortments of tasty appetizers on the weekend evenings…sort of our own happy hour (I make a mean Mai Tai during this time). But sometimes we need to shake up those traditions-not change, just add to them! So last weekend when we were having our mini happy hour with the whole family, I decided to make something new, so these Parmesan-Basil-Lemon Zest Crisps were born. Admittedly, this is not an original recipe…it was created by my girl Giada de Laurentiis. It’s SUPER easy and equally delicious! Plus, since it’s Parmesan cheese, basil, and lemon zest it’s low-cal (well, if you don’t eat the whole batch like I basically did!)
They are deliciously thin and crispy wafers that are rich and flavorful (and they kind of look like cookies!). You can find the recipe here. Hope you enjoy!
