Panzanella: The Perfect BBQ Side

I love a great BBQ, especially on a warm summer evening. What I’m not a huge fan of are the heavy, mayo-laden, nutrition-less sides that accompany the main dish. As I started to think about this upcoming weekend (yay for three days off!) and the Memorial Day holiday I began to think about BBQs… naturally, right? Since Memorial Day is the traditional summer kick-off I decided to look for a healthy summer BBQ side that could be devoured, guiltless-ly, along with smore’s  (there’s the itsy bitsy indulgence) and ribs! Now, I don’t typically consider Barefoot Contessa waist-line friendly (I guess words such as “good mayo” sounded the alarm for me) but when I stumbled across this Panzanella salad it looked too good to pass up. It’s vegetable heavy with the exception of the homemade croutons (too good to pass up, although they could be left out). In fact, most of the dish consists of zero calorie foods (these are foods that burn more calories than they contain: tomatoes, cucumbers, and red onions) or super foods (bell peppers and basil).
