Mango + Black Bean + Corn Salsa

This past weekend we had several different celebrations to attend, two for father’s day and one birthday, all of which would be celebrate al fresco!  With all of those celebrations, and the thought of sitting poolside in the warm sun,  I was in search of the quintessentially light and mouth watering dish to bring as an appetizer (they say threes a charm, so I was bound to bring something somewhat decent to one of the three events!). As I was thinking about what to bring, I decided to go with my always present craving for Mexican food, combined with my “itsybitsyindulgences” mind frame, and came up with a mango, black bean, and corn salsa that was packed with nutrients, and at the same time mouth-watering! It was a one stop shop at Trader Joe’s for all the ingredients and it only took about 20 minutes from start to finish! Oh… everyone enjoyed it as well (I mean that was ultimately the main goal…right?!)!

{Lemon/Lime Juicer/Target (the juicer is a must have to get out every last drop of juice..also easier on the hands!) Mango Slicer/Target (this was seriously so simple to use and took the pit out so easily!)}
