Homemade Healthy Popsicles

Summertime as a child was blissful. Three months of absolutely nothing but free time, BBQ’s, sleepovers, beach days, pool parties…the list could literally go on (and I’m beginning to question why I entered adulthood…). One of my favorite summertime memories is playing capture the flag for hours with a few of the other neighborhood kids, sprinting onto enemy territory, snagging that treasured, yet elusive flag, and making a B-line for safety. After working up a sweat, Mom would always have an ice cold popsicle waiting for us in the freezer (Cherry being the best flavor, of course). So with Memorial Day officially kicking of summer, and the undeniably perfect weather we had this weekend, it would have been unnatural NOT to have popsicles. However, we aren’t children anymore and, to be a total buzz kill, we simply aren’t able to eat the same things as we could when we were little energizer bunnies. So, armed with a mini popsicle maker from Sur la Table, we sought to create homemade, lighter versions (all three under 100 calories) of these tasty treats! Not to toot our own horns, but YUM.

To make them, simply blend the ingredients in a blender, and pour into a Zoku Quick Pop Maker, wait about 10 minutes, and out come these delicious, icy treats! And at under 150 calories, they are true itsy bitsy indulgences!
