Well, Valentine’s Day is this weekend (I mean, decorations went up for sale the day after Christmas, right??!). I’ve always loved this holiday of “love.” Who doesn’t remember creating a “mail-box” in elementary school… picking out Valentine’s based on your favorite cartoon, writing them out and tossing little heart shaped candies in the envelope, and then dropping them in all your friend’s mailboxes the next day at school?? I remember heart shaped peanut butter sandwiches from my mom in my lunch. Or, as we got older and entered middle school there were Valentine-grams… sent from friends and secret admirers. It’s the day of hearts and lips… and they abound.
So, it was only natural for a family get together this past weekend that we decided to make a Valentine’s themed dessert. Opting for the healthier (slightly) option of angel food cake, we decided to use cookie cutters to theme it up. The result? A delicious, guilt-free option enjoyed by all (by the way… pairs delightfully with any wine of your choice :)).
Ingredients:
Box of Angel Food Cake Mix (bake based on the instructions on the box).
2 cups sliced strawberries
2 tablespoons honey
Instructions:
Bake the Angel Food cake per instructions on the box. (you can make your own from scratch, but for a quick treat, this is the way to go!).
While the cake is baking, slice the strawberries, and place in a food processor. Add the honey and chop together until the consistency is slightly pureed along with chunks of strawberries.
When the cake is done and has cooled, slice 2 inch thick pieces and use the cookie cutters to create the shapes.
When serving, you can drizzle the strawberry mix on top. Some other optional toppings?? Whipped cream or frosting for a slightly heavier option.
