Healthy Mexican Fiesta

I had been looking forward to this past weekend since the previous weekend (yep, still working on that…). Not because there was anything special planned, but because there was NOTHING planned. Yes, completely not normal for me to be okay with nothing planned. So, with this new found reckless abandonment, we went to bed Friday night without any Saturday evening plans. When it came time to decide what we wanted to do (going out had been ruled out… stretchy leggings, a baggy t-shirt, and fuzzy slippers were the only acceptable attire for the evening) we turned to an all time favorite: Mexican. Wanting to lighten it up a bit we got creative! One of my favorite things to do, when staying in, is getting creative in the kitchen. This typically involves making “lighter” versions of typically “heavier” food choices. I was craving chips and guac, but after an 8 mile run, wasn’t willing to negate the benefits. So, I bring you our casual, relaxed, and healthy Mexican fiesta!

Wanting a refreshing cocktail, without bulging the waist line, we opted for a watermelon tequila cocktail! We picked up fresh watermelon juice from Lemon Drop Juice, mint from my mom’s garden, and tequila from Don Julio…. I figured that since watermelon is good for you, and tequila never hurt anyone, this was a sensible cocktail. Might I add, it was thirst quenching.

Next on the menu? Homemade tortilla chips. Incredibly simple and a much healthier option. See that plate there? It’s 200 calories… when split between two people, 100 calories, with practically zero fat. Simply take two corn tortillas and cut each of them into 12 pieces. Spray with non-stick olive oil cooking spray, and season with salt and pepper. Next, broil them in the oven until they are crispy to your liking (watch them closely, they will burn quickly). Use a small avocado to whip up some healthy guacamole.

We rounded out the meal with fajitas! For the chicken we purchased the pre-marinated chicken breasts from the local carniceria. To cook the chicken we grilled it on the BBQ. For the bell peppers and onions, slice them, heat up a little olive oil in a pan, and then toss them in and cook to your desired firmness.

Tossing in a few cute plates and fun straws makes the whole experience that much more fun! I seriously can’t wait for the next night in to get creative… I’m feeling something Greek… or maybe Chinese!
