Some things just scream summer: running through the sprinklers as a child, flip flops flopping on the sidewalk, sunset at nearly 8 pm, and, my all time favorite: BBQ’s at every house in the neighborhood. The warm weather has always pulled our family outside, and we take advantage of the longer days and warmer weather by having happy hour outside, and grilling almost every night. Don’t get me wrong-we absolutely don’t grill meat everyday. Our philosophy has always been that if if it can be cooked, it can be grilled! One of our most recent favorite grilling victims: Veggies! They provide a quicker, lighter alternative to grilling burgers and other proteins (though I’m not turning those down either), and grilling the veggies gives them a very different, DELICIOUS taste and smokiness that cooking, roasting, and steaming generally don’t provide. Some of our favorite veggies for grilling: asparagus, peppers, and the most recent: green beans!
Ingredients:
Fingerling/teeny tiny potatoes
Red onion
Red & yellow peppers
olive oil
salt/pepper
Instructions:
Boil potatoes until soft. Cut the red onion, red and yellow peppers.
Sprinkle with olive oil and salt/pepper.
Toss it all together. Voila!
{Grilled Balsamic Vinaigrette Asparagus}
Simply drizzle asparagus with balsamic vinaigrette and sprinkle with parmesan cheese before AND after. Add as much as you like (we’re generous with our cheese)
{Grilled Green Beans}
Ingredients:
Green beans
olive oil
Red onion
2 garlic cloves, minced
low-sodium soy sauce
1 tsp dark sesame oil
salt/pepper
Instructions:
Place onion, garlic, and green beans in a large bowl, drizzle with olive oil, and toss.
Arrange mixture in a grill basket on the BBQ and cook about 7 minutes. Then place bean mixture in a bowl and cover for 5 minutes.
Finally, add soy sauce and remaining ingredients, toss. Indulge!
