When we were in Hawaii, my sister got my entire family hooked on Wordle… I’d never heard of it before that trip, and now it’s become a daily routine… and part of our family text chains. When I shared this on instagram, a few people recommended Quordle… which is basically Wordle on steroids and now that’s another word game that both TJ and I are hooked on, daily. I liken it to crossword puzzles (well, loosely). I grew up watching my grandparents do crossword puzzles all the time, and my grandma is 94 and still rockin’ so I’m thinking these word games have some benefit….
All that to say, I’m stuck on a couple words in my Quordle, and it’s sort of all I can think about right now (especially since TJ got it earlier this morning)… so that’s what I’ll be doing immediately after I finish this post. And if you haven’t tried either, I highly recommend!
Word games aside, I’m sharing 5 easy, and delicious meals, that we had a couple of weeks ago. I always love getting inspo from restaurants or other people, so in case you’re in need of it as well, I hope this helps! They’re all relatively easy, with low clean up and prep, and delicious….

MONDAY
BREAKFAST: Egg Scramble- Hilary’s Eats Well Veggie Sausage (so good), micro cilantro, avocado, pico de gallo, pickled onion, Trader Joe’s Everything But The Bagel Seasoning
SNACK: 1/2 perfect bar
LUNCH: Leftover pizza from Sunday night (Chloe Vegan Cauliflower Crust… violife mozzarella cheese, green bell peppers, olives, red onion, mushrooms, proscuitto)
SNACK: Purely Elizabeth Granola, strawberries, dollop of Justin’s Peanut Butter
DINNER: Shredded Chicken Tacos (crock-pot)
TUESDAY
BREAKFAST: Omlette
SNACK: 1/2 perfect bar
LUNCH: Leftover chicken in a taco salad- power greens, brown rice, avocado, pickled onions, shredded carrots, sliced bell peppers, shredded chicken, salsa verde
SNACK: Rhythm beet chips + hummus
DINNER: Cedar Plank Salmon: marinade salmon in avocado oil, minced garlic, sea salt, lemon juice, lemon zest, and fresh diced cilantro (eyeballed ingredients) and then grilled it on the BBQ (depending on how big your salmon is, cook for about 10-15 over medium heat on the grill). Paired with steamed green beans and garlic herb Right Rice
WEDNESDAY
BREAKFAST: Breakfast Tacos- two corn tortillas, two soft scrambled eggs, pico de gallo, avocado, micro cilantro, pickled onions
SNACK: apple
LUNCH: Lentil Salad- Trader Joe’s lentils (pre-cooked), brown rice, arugula, avocado, pickled onion, pico de gallo, Follow Your Heart Creamy Garlic dressing
SNACK: Simple Mills Bar w/peanut butter
DINNER: Greek Lamb Meatballs
THURSDAY
BREAKFAST: Avocado Toast (mashed avo seasoned with lemon juice, sea salt, Trader Joe’s Everything But The Bagel Seasoning), topped with Follow Your Heart Feta Cheese, Pickled Onions, Micro Cilantro
SNACK: 1/2 perfect bar
LUNCH: Primal Kitchen quick meal (I add in some brown rice)
SNACK: Baby carrots, beet chips, simple mills crackers, and hummus
DINNER: Fiesta Bowls
FRIDAY
BREAKFAST: Birch Benders Paleo Pancakes, bacon, strawberries
SNACK: full from breakfast
LUNCH: Lentil Salad (same as Wednesday)
SNACK: 1/2 perfect bar
DINNER: Take-out Greek Food (from Cava)
