Ahhh breakfast: the most important meal of the day, and, arguably the best meal of the day. Think of the variety of breakfast options: french toast, pancakes, waffles, eggs (a million different ways), oatmeal, etc…there’s a breakfast for everyone! My most current personal favorite: the breakfast sandwich. I’ve found that it offers the perfect amount of carbs and protein to give the perfect amount of energy, and the crazy amount of protein keeps me full for literally hours. The best part is that it’s SO SIMPLE! Who wants to slave over a stove first thing in the morning?? If you know me even a little, you know that’s not something I’m going to do in the morning. And an added bonus is that the breakfast sandwich is so diverse-there are a variety of ways to make it, and Shannon and I happened to come up with two very different creations, the first of which I’ll share here, and the second of which Shannon will share next time.
