Before I became pregnant, TJ and I would enjoy evenings in, creating fun and unique cocktails from our travels. We would mix them up, say a toast, and reminisce about whatever trip inspired the cocktail. Since mixology had to take a temporary hiatus for the past 9 months, I was determined to not let this holiday season go by without mixing up something festive. So last weekend we decided to have a date night in. I dressed up a little (notice I am wearing slippers on my feet… comfort first please!) in this pearl embellished sweater and favorite leather leggings, turned on some Christmas music, and put together a very simple cocktail for me. TJ opted for a finger or two of scotch, and I opted, of course, for something that would mimic my love of Champagne. After the “cocktails” were mixed, we enjoyed an evening of trimming the tree, laughing about past travels as we took out our ornaments from various parts of the world, and welcoming the next few weeks with great anticipation as we wait for our little girl to make her appearance in the world!

Sparkling Pomegranate  

1 sugar cube
2 tablespoons of pomegranate seeds
Pomegranate juice
1 bottle of non-alcoholic champagne (you can use regular champagne if not pregnant)

Place the sugar cube in the bottom of the cocktail glass. Pour in champagne until the glass is 3/4 full, and top off with pomegranate juice. Add the pomegranate seeds for a festive flair!
