Yogurt Sandwiches

Frozen Yogurt Sandwiches are one of my favorite indulgences. Not only do they remind me of my childhood, but they also combine two of my favorite sweet treats: Frozen Yogurt & Graham Crackers. When I was little my nana used to make “Frosting Sandwiches” which consisted of a heaping of left over cake frosting pressed between two delicious graham crackers. I always knew I could count on one of these sweet indulgences on a visit to my nana’s house (that or Oreos). Here is a lighter and healthier version of my nana’s sandwiches. Each one is approximately 125 calories and the best part is you can customize them to your liking (based on the yogurt flavors you choose). It never hurts to add a few spring colored sprinkles as a finishing touch.

You’ll need a box of graham crackers, a quart of frozen yogurt (whatever flavor you like… I made mine with red velvet and graham cracker), sprinkles, and a utensil to scoop the frozen yogurt. I also highly recommend breaking the graham crackers in half before you start to assemble the sandwiches. These melt quickly so you’ll want to have everything laid out before. Another quick tip: Make these immediately after you purchase the frozen yogurt, while the fro yo is still soft.

Place about a spoonful size of yogurt on one graham cracker and then top with the other cracker…pretty simple!

As I completed each sandwich, I had a plate in the freezer where I would place each one as I went. That way they won’t melt as you go. After you complete them all, place them, covered, in the freezer for about 2 hours. Then enjoy! If you have left overs you can enjoy them throughout the week. Despite the fact that the yogurt hardens, the graham crackers remain amazingly soft. I hope you enjoy these itsy bitsy indulgences!
