I’m usually on a mission when I step foot into Trader Joe’s. Either I have the girls with me, or it’s a Sunday afternoon + being at the grocery store is the last thing I want to do. Under both circumstances, I leave little wiggle room for casually perusing the aisles.
YET, there was a day, several weeks ago, when I went solo, on a Friday afternoon, and actually looked around a little. These Norwegian Fiber Crackers spoke to me. I’d been trying out the regular GG Fiber Crackers, but wanted to give these a try. Um, so good. So flavorful. And then I started to get creative…. afternoon snacks, lunch, breakfast… they’re pretty versatile.
So today I’m rounding up 10 easy ways to eat these things. They’re super easy to take with you to work (maybe as a snack stash in your desk drawer??), travel with (I’m taking them with me today on my flight), and if your kiddos are adventurous they make a great “cracker snack.” If you’re looking for something to pack flavor, with the added benefits of fiber, then these things are great!

Peanut Butter + Berries + Lily’s Chocolate Chips
Hummus (I’ve been loving the Olive Hummus From Trader Joe’s) + Smashed Avocado + Cherry Tomatoes + Sprouts + Everything But The Bagel Seasoning
Smashed Avocado + Soft Scrambled Eggs + Micro-greens + Sriracha + Everything But The Bagel Seasoning

Hummus + Avocado Slices + Turkey Slices + Micro-greens
Smashed Avocado + Lox + Red Onion + Capers
Pizza Sauce + Cheese (DF if you don’t eat cheese) + Tomato Slices + Basil
Almond Butter + Banana Slices + Cinnamon
Hummus (I did it with the Trader Joe’s Olive Hummus) + Cherry Tomatoes, Cucumbers, + Shredded Carrots (tossed together in some avocado oil + sea salt)
Hummus + Artichoke Hearts + Cherry Tomatoes + Balsamic Glaze Drizzle
