Butternut Squash Pizza- The Perfect Fall Dinner

I love cooking in the fall. The dishes leave you feeling comforted and warm on the inside… and probably because it tends to involve a lot of baking. Or maybe because it’s the season of butternut squash and pumpkin, two of my favorite ingredients to cook with. I love the natural sweetness they bring to any dish (butternut squash salad recipe) and almost always opt for dishes that contain them when dining out. Which is why this past weekend I chose the butternut squash pizza when we visited Urth Cafe. It was everything I had hoped for and more. Gooey from the cheese (yes, I went with regular cheese here… although my stomach wasn’t too happy about it later on), sweet (and I like to think healthy because squash is a vegetable) from the butternut, and soft from the perfectly cooked dough. I pretty much decided, on the spot, that I would be recreating the dish at home. And recreate I did. Monday evening I cooked up the pizza to have as lunch for the next few days… and let me tell you, I’m on day 2 and could continue eating it for the rest of the week. Which I would do, if TJ hadn’t eaten my other slices 🙂 Either way, it’s a perfect fall pizza and will leave you wanting more.

On an unrelated note. I have reformatted the recipes for this site. From now on, you will find a printable recipe card at the end of each post. My hope is that it will make it easier to recreate dishes and then add them to your recipe box (if you still keep one :)). Hope you enjoy!

Butternut Squash Pizza

Serves: 8 slices
Ingredients
  • 16 oz whole wheat pizza dough (I prefer Trader Joe’s)
  • 1 cup dairy free cheese (I prefer Daiya Mozzarella or Trader Joe’s Soy Mozzarella), or regular cheese
  • 3-4 cup diced, cooked, butternut squash
  • 1/2 cup chopped red onion
  • 1 cup arugula
  • balsamic glaze (I prefer Trader Joe’s)
  • 1 tbsp olive oil
  • 1 tsp minced garlic
Instructions
  1. Pre-heat oven to 425 degrees
  2. Spray pizza pan with a non-stick spray
  3. Spread dough out on the pan
  4. Place the pizza in the oven for 13 minutes
  5. In a small bowl, mix together the olive oil and garlic, then spread over the pizza dough
  6. Top the pizza with the remaining ingredients, with the exception of the arugula and balsamic glaze
  7. Place back in the over for an additional 8-10 minutes
  8. Once done cooking, drizzle balsamic glaze over pizza and top with arugula
  9. Slice into 8 pieces
