Halibut’s Healthy Helper

There is truly nothing greater than a family dinner. Spending time with my parents, sister, and brother in law is one of my favorite ways to spend a Saturday night. What’s even better is that we all share the same passion for indulging in these special meals in a way that is healthy and delicious. And let me tell you, surrounding yourself with these similar values certainly makes staying on track much easier and more enjoyable! So when we do get together, we love smoking a lean beef on my dad’s prized smoker, or, for the ladies, digging into some fresh fish. This weekend it was Halibut, and the sauce my mom cooked for  it was out of this world-full of flavor but absent of any oil or butter! We thought we’d share the recipe with you all:

You’ll need:

~¾ tsp. salt
~¼ tsp. freshly ground black pepper
~1 ½ cups fat-free, reduced-sodium chicken broth
~4 tsp. arrowroot or cornstarch, dissolved in 2 tsp. water
~1 tsp. chopped fresh rosemary
~4 thin lemon slices
~3 tbsp. drained nonpareil capers

~Add the chicken broth to a pan and bring to a simmer. Then add the corn-starch and whisk that into the broth until the sauce has thickened, about 2 to 3 minutes.

~Finally, add the rosemary, lemon slices and capers, and let simmer. After a few minutes, it’s ready to be drizzled on top of your halibut (which we chose to grill) for a light, tasty, guilt-free flavor boost!
