Peach & Proscuitto Canapes

I love Summer for so many reasons (I think I’ve listed them at least 5 times here). But one of the reasons not listed: it’s peach season! I LOVE all things peaches…I think I’d even go so far as to say they’re my favorite food (besides french fries, of course. Slightly healthier indulgence, right?) So we got a little creative with our use of peaches recently. Since Shannon has a sweet tooth and I have a salty tooth (??), we combined the two and created our homemade version of Cooking Light’s Peach & Proscuitto Canepes (or, as I like to call them, bruschetta). They were the perfect size, and the ideal combination of salty (who doesn’t love proscuitto??) and sweet from the peaches. Plus, this cream cheese spread is low cal AND tasty. This has definitely topped the list of party appetizers, especially during the summer, although canned peaches could definitely be used as well!
