Have you heard that Shannon and I bought the same pair of high-waisted skinnies this past weekend? If you’ve been reading along at all this week, you’ll know how in love we are with these jeans we found (well, Shannon found, and I lusted over until I bought a pair of my own a few minutes later). In the dressing room, we stared at ourselves in these jeans, and vowed to hold each other accountable to clean eating and regular exercise so that we would always feel comfy in our new beauties. That being said, with all of our recent celebrations (Father’s Day, our mom’s birthday, etc.) we have needed to be extra diligent about our indulgences, which led us to this delightfully tasty (and easy!) salad-lighter on calories, but definitely not on taste. The best part for me: it involves cheese!
Ingredients:
Burrata Cheese (we used the kind from Trader Joe’s)
3 large heirloom tomatoes
Basil to your liking
olive oil to your liking
balsamic dressing to your liking
sprinkling of salt and pepper
Instructions:
Slice the tomatoes and mix all ingredients except cheese.
Slice the cheese when you are ready to serve, and mix in with rest of salad.
