On Sunday evenings, we try to get a bit more creative with dinner, before we head into our go-to weeknight meals (haha), so this Monday Eve we were going for something Greek inspired. We already have our favorite Greek meatballs, so we decided to turn them into burgers (we added DF feta cheese into the lamb mixture for these) and make a delicious Greek inspired pasta salad. The entire meal was loaded with flavor, and made great leftovers for Monday’s lunch. 

I pretty much eyeballed everything, so I don’t have exact measurements, and I think that’s okay… since you can add more of what you like (I love olives, so it was an entire can for me, haha) and less of what you don’t…

FOR THE SALAD

1 Box Of Pasta (we used Tolerant GF)
12 oz Cherry Tomatoes (halved) 
1/2 Large Red Onion (sliced) 
1 Cucumber, diced)

1 Can Of Medium Black Olives + Kalamata Olive 
Feta Cheese (we use Follow Your Heart DF Feta)

FOR THE DRESSING

¼ cup avocado oil (or EVOO)
3 tablespoons red wine vinegar
1 garlic clove, minced
½ teaspoon dried oregano, more for sprinkling
¼ teaspoon Dijon mustard
¼ teaspoon sea salt
Freshly ground black pepper
