4 Under 30 Minute, Weeknight Meals

I always find the evolution of parenthood to be so interesting. And as I sat down to write this, the shift of dinnertime was something I reflected upon. When the girls were younger it was referred to as the “witching hour…” and I’d say most parents know what I’m talking about when I mention those two words. But 5-6ish was that time for us… which just so happened to coincide with dinner prep….

Now as the girls are older, it’s still a “witching hour” of sorts, but in a much different way. It involves simultaneously arriving home from after school activities, finishing up lingering homework, baths, and squeezing dinner prep in there somewhere. And as they get older, I know it will evolve more, so I’ve heard….

All of that to say, as much as I wish we could leisurely enjoy the kitchen and cooking dinner, the reality is that during the week, at this phase of our life, it needs to be quick… but I also want it to be nutritious and something everyone can enjoy. And while the majority of the concepts for dinner come from my brain, TJ is typically the executor of the meals.

That being said, if you find yourself in the same boat as our family, or just in need of quick and delicious meals in the evening (that also have the added bonus of being gluten and fairy free), then I think this post will be somewhat helpful. I’ve included 4 images below, with each containing the easy how to steps for a simple, under 30 minute meal, that we enjoyed over the past couple of weeks. These aren’t gourmet, or fancy, but they are a hit with every single member of the family, and easy to prepare, so I always find that to be a win.

So as you head into the weekend ahead, when you come to Sunday evening and start to think about meals for the week, I hope this can provide a bit of inspo if you’re in need of something quick!
