Our mom has a pretty fantastic green thumb. Ever since we were little, our mom has planted things that just tend to take off in our yard. This year she decided to tackle herbs and some new fruits, like tomatoes. Both have been very successful, and we took full advantage of these organic treasures on the fourth of July.
One of the best parts of this recipe is that it is 100% carb-free! It is the healthiest version of bruschetta with all the flavor and tastiness of regular bruschetta! Plus, tomatoes (especially homegrown) are jam packed with lycopene, antioxidants, vitamin C, and a whole bunch of other good stuff for your skin, bones, and organs!
