Weekend Recap

This weekend, I found myself constantly with Lion King’s “Circle of Life” stuck in my head (and watching the Lion King with the kiddos I babysat Saturday night certainly didn’t help). But it really just seemed appropriate…this weekend was spent celebrating life at every stage, and I found myself being extra aware of that this weekend. Friday night was spent celebrating our dad’s 61st birthday (sshh, don’t tell him we told you), and it was the first time most of us had heard about specific instrumental people and events in his life that shaped him into who he is today. Saturday Shannon attended a grad school friend’s baby shower- celebrating the imminent birth of a new life. And date nights/days abounded, celebrating a sort of “mid-life” which, I believe, is equally worth celebrating! No matter where you are in “the circle,” there are always reasons to celebrate, right?

    How do you make that asparagus flatbread? Looks amazing

      Hi Kelly! I buy the trader joe’s whole wheat dough. Pre-heat over to 450. Then I blanche the asparagus. I put the pizza in the oven for 10-13 minutes. I take it off and then spread a thin layer of olive oil/garlic over the crust. Then top with 1 cup reduced fat mozzarella, two slices of proscuitto, some red onion and the asparagus. Then I put it back in the over for 10 minutes. After I remove it I sweep a balsamic glaze (also from trader joe’s) over it! It’s so yummy and about 150-175 per slice (I slice it into 8 pieces).
