“Ice Cream” Sandwich Bar



Growing up, there was NOTHING like an ice cream sandwich on a hot summer day. I clearly remember carefree childhood afternoons running through the sprinklers, playing Marco Polo in the pool, or grass-staining my entire body on a Slip ‘n Slide (I tried to convince people that this gem was necessary for my 25th, but swiftly lost that argument), and then coming inside for a popsicle or a coveted ice cream sandwich. The chocolatey, creamy, processed goodness was so refreshing on a hot day back then, and we all know it still is today. However, some things have changed…like my metabolism. So at our last BBQ, we indulged itsy bitsy style in this low cal, low sugar ice cream sandwich bar-toppings and all! The cookie recipe (seen here) is “Secretly Skinny,” and we used a healthy scoop of vanilla frozen yogurt as the stuffing. A festive topping bar included (my favorite) rainbow sprinkles, graham cracker crust, crushed pistachios, and mini chocolate chips, creating the perfect indulgence! And you can make it your own by adding any topping you want-fruit, candies, crushed oreos, slivered almonds, peanuts…whatever you find in your favorite ice cream shop, you can add to this tasty treat! It’s the perfect, light(er) finale to any summer BBQ, party, or brunch!
