Skinny Mac n’ Cheese

Ever have those days/weeks when all you want is something cheesy, gooey, and comforting? But you don’t want the guilt of eating something actually cheesy, gooey, and comforting? Well here is your solution! Last week I was just feeling like rewarding myself (I usually choose to do so without food, but you have the bend the rules sometimes, right?!). So I hunted for a delicious skinny macaroni and cheese that would give me those textural, taste, and sensory goods that traditional mac and cheese provides, but that wouldn’t totally negate my morning workouts. My mom and I stumbled upon this recipe, one of Bobby Deen’s (Paula Deen’s healthier son). And, if I do say so myself, it turned out creamy and delicious-it has an extra taste with the cayenne pepper and dijon mustard (I had to tone down the cayenne pepper since I have zero tolerance for anything spicy)….and I ate it for leftovers every day until it was gone!
